Very Berry Compote with Elderberry
Fresh summer berries are one of our favorite parts of the season! When the farmers markets are full of local strawberries, blackberries and blueberries, this simple compote is an easy way to enjoy them all.
Naturally sweet and bursting with fresh berry color and flavor, this recipe comes together in just a few minutes. We love serving it over pancakes, waffles, yogurt and oatmeal.
Ingredients
1/2 cup honey
1/2 cup fresh blackberries (or any berries you have on hand)
Directions
Add the honey and berries to a small saucepan.
Heat over medium-low heat for about 10 minutes, until the berries begin releasing their juices.
Remove from the heat.
Gently mash the berries with the back of a spoon to release even more juice.
If you'd like a smoother compote, strain out the seeds.
Stir in the Elderberry Syrup.
Serve warm over waffles, pancakes, yogurt, oatmeal or your favorite breakfast.
