Golden, caramelized Brussels sprouts, crunchy toasted pecans, and a bright, zesty finish from Mindfully Made Fire Cider. This simple seasonal side dish is full of flavor and perfect for gathering around the table.
One of our favorite things about Fire Cider is discovering new ways to enjoy it in the kitchen. While we originally made these Brussels sprouts with our Fire Cider Vinaigrette, we discovered that a splash of Fire Cider straight from the bottle brought out an even brighter flavor. Sometimes the simplest preparations really are the best!
Ingredients
Serves 6–8
2 lbs Brussels sprouts, trimmed and halved
2–3 Tbsp olive oil
¾ tsp sea salt
¼ tsp freshly ground black pepper
½ cup chopped pecans
2–3 Tbsp Mindfully Made Fire Cider, or to taste
1–2 teaspoons fresh thyme leaves, for finishing
Instructions
Roast the Brussels sprouts: Preheat your oven to 425°F. Toss the trimmed and halved Brussels sprouts with olive oil, salt, and pepper. Arrange cut-side down on a large baking sheet, leaving space between them.
Roast for 25–30 minutes, until golden brown and caramelized around the edges.
2. Toast the pecans: While the Brussels sprouts roast, add the chopped pecans to a dry skillet over medium-low heat. Toast for 3–5 minutes, stirring frequently, until fragrant. Remove from heat.
3. Add the Fire Cider: Transfer the warm Brussels sprouts to a serving bowl. Drizzle with 2 tablespoons of Mindfully Made Fire Cider and toss gently to coat. Taste and add another splash if you'd like a brighter, tangier finish.
4. Finish and serve: Sprinkle the toasted pecans over the warm Brussels sprouts and finish with fresh thyme leaves. Serve immediately.
